I was originally going to post articles here, but everyone liked the recipes I temporarily posted that I decided to keep posting them.  So, enjoy!

CRANBERRY PUMPKIN BREAD
“Home Again, Home Again,” (2004) by Junior League of Owensboro, Ky

3 1/2 cups flour
1 1/2 cups sugar
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
3/4 teaspoon salt
1 teaspoon baking powder
1 (16-ounce) can whole cranberry sauce
3/4 cup chopped pecans
2/3 cup vegetable oil
4 eggs, lightly beaten
1 cup confectioners’ sugar
1/4 cup thawed frozen orange juice concentrate
1/8 teaspoon allspice

SWEET POTATO CASSEROLE

SWEET POTATOES
3 cups mashed cooked sweet potatoes
1/2 cup packed light brown sugar
1/2 teaspoon salt
2 eggs, beaten
1/2 cup evaporated milk
1 teaspoon vanilla extract
2 Tablespoons plus 2 teaspoons (1/3 stick) butter or margarine, melted
TOPPING
1/4 cup (1/2 stick) butter or margarine
1 cup packed brown sugar
1/3 cup flour
1 cup chopped walnuts or pecans
1 cup shredded coconuts (optional)

For the sweet potatoes, combine the sweet potatoes, brown sugar, salt, eggs, evaporated milk, vanilla and butter in a bowl, and mix well. Spoon into a baking dish.

For the topping, cut the butter into the brown sugar and flour in a bowl until crumbly. Stir in the walnuts and coconuts.

Sprinkle the topping over the sweet potato mixture. Bake at 350 degrees for 30 minutes. Serves 6.
